Memorial Day means grilling season is here! But you don't always have to grill hamburgers and hot dogs. Instead try these 3 healthier options and throw them on the grill this Memorial Day Weekend.
Cedar Plank Dill Salmon:
Ingredients - cedar grilling plank, fresh salmon filet, fresh bunch of dill weed, fresh lemon
Directions - Soak the cedar plank in water for at least one hour before grilling. Place the fresh dill on the cedar plank and then place the salmon on top. Break off and sprinkle some fresh dill over the salmon. Cut the lemon in half and squeeze fresh lemon juice over the salmon. Season with salt and pepper if desired. Grill on medium heat for 8-10 minutes. Remove once salmon is flaky.
Grilled Honey Peaches:
Ingredients - peach, fresh honey
Directions - Slice the peach in half and remove the pit. Place the peach on the grill flat side down. Grill on medium heat for 3-5 minutes. Place the peach on a plate, flat side up, and drizzle with honey.
Southwest Grilled Potatoes:
Ingredients - 4 Yukon potatoes, cumin, garlic powder, paprika, chili powder, olive oil
Directions - Cube the potatoes and place in a bowl. Sprinkle on 1 tablespoon of cumin, 1 tablespoon of garlic powder, 1/2 tablespoon paprika, 1/4 teaspoon chili powder and cover with olive oil. Mix well and place entire mixture in tin foil or gilling basket. Grill on high heat for 20-30 minutes until the potatoes are soft inside.
